Springtime, Any Time Joy in the Kitchen

It's a little difficult to describe the joy. . .



It’s a little difficult to describe the joy that I have been experiencing lately when it comes to nourishing my body. I truly mean happiness, gratitude, and a sense of deep appreciation for all the blessings of living in the Southwest where fresh produce is abundant, and a trip to Whole Foods is a literal feast for the senses.
 
I’m not a ‘come lately’ by any means when it comes to nutrition. Health, nutrition and personal balance have always been very important to me. I’ve juiced since the 70’s on and off. I’ve been vegan. I’ve done raw. And I seriously studied nutrition and metabolic balance during the years in the chiropractic office where I provided patient education and support. 
 
Looking back, my interest must have started with the family garden as I watched my dad plow the quarter acre plot and line up row after row of straight lines with string. Then came the planting of the little seeds that grew into corn, tomatoes, green beans, peas, carrots and so much more. 

I fondly remember the marigolds and other flowers that were planted to keep the bugs away. And for some reason that I don’t understand, in those days the bunny rabbits hardly ever ate our lettuce, radishes or carrots, and we had plenty for our dinner salads.
 
As I write this, I can almost feel the moist earth of that childhood garden and taste the sweet new peas that we popped into our mouths as soon as they were ready. Memory of the garden brings back the richness of so many senses, sight and touch and even the fragrance of the wild rose bushes that marked the boundary of the garden on the north.
 
When my husband and I go to the farmers’ market, or when we buy locally grown produce from the market in town, I feel the same excitement as I feast on the sight of the beautiful colors of so much fresh bounty.
 
I came home from the market yesterday with cucumbers, carrots, celery, kale, mangoes, oranges, apples, lemons, a pineapple, ginger and more! I couldn’t wait to start up our trusty Omega 8006 juicer to try the enticing new juicing treat called Orange Sunrise. 
 
The Orange Sunrise is made from orange bell peppers, carrots, an orange, pineapple chunks and a lemon. It was wonderful! Oh so tasty. And super energizing, too. For sure, I will make this one again. 
 
And that’s where the joy flows into this story. I got so happy and so filled with gratitude that I just had to share this with you!
